I chanced upon this packet of frozen salmon fillet in the supermarket recently and I studied it for a few seconds. During that few seconds, my brain did a quick search on a few recipes that I can use these with at lightning speed, so 2 packets went into my shopping basket. At $6.90 per packet, I think they were not too expensive for us indulge on.
Later that day when I opened up the packet I was surprise to see that the fillet was fairly thick and definitely value for money. I am paranoid about salmon sold in supermarket so I put it close to my nose to try to sniff a whiff of fishy smell but there were none.
I started preparing the salmon for dinner, cooking it in teriyaki sauce. However I am not using the store bought teriyaki sauce, instead I am following the simple step from a cook book to make the sauce that only need sake, miri, shoyu & sugar.
I gave DinoBoy a choice of spaghetti or fusilli and he chose the latter. No sauce required for this pasta meal as there were ample teriyaki sauce leftover to dribble over the pasta. The boy finished everything, including the boiled vegetables.
Oh, I did not managed to turn my salmon over fast enough that's why it looked a little bit charred. Luckily I did not burnt it otherwise no dinner for both of us that day.
I didn't want DinoPapa to miss out this self proclaimed lip smacking salmon so I saved a piece for him to eat when he is back from work, he said it is very tasty and is surprised that the sauce is made from a few ingredients instead of using the bottled one we had in our cupboard.
The pan fried salmon in teriyaki sauce would go well with mashed potato & coleslaw or with steaming white rice & some boiled vegetables, it's really up to individual preference.
Pan Fried Salmon in Teriyaki Sauce

Ingredients
* 4 Salmon fillets, about 140g each
* 2 tablespoon cooking oil
* some broccoli florets, carrots or any greens you prefer
Teriyaki Sauce
* 2 tablespoon sake
* 2 tablespoon miri
* 3½ tablespoon japanese soy sauce (shoyu)
* 2 tablespoon sugar
Method
1. Pour the ingredients for teriyaki sauce in a bowl and mix well.
2. Pour the sauce over the salmon fillets and leave to marinate for 15mins. Turn the fillets over and leave to marinate for another 15mins.
3. In the meantime boil the vegetables in a pot of water for about 7-10mins. Drain and set aside.
4. Bring a pot of water to boil, add in a pinch of salt then add in the fusilli. Boil it for about 10-12 mins or according to the time stated on the package. Drain and set aside.
5. Pat the fish dry with kitchen towel, set aside for use later.
6. Reserve the sauce for use later.
7. Heat the cooking oil in a non stick frying pan and pan fry salmon on medium heat until both sides are cooked. Set aside.
8. Return the sauce into the pan and simmer over low heat until the sauce thickens.
9. Pour sauce over salmon fillets, serve with pasta and vegetables.
